Okay, maybe not an ode, maybe just a blog, but blog to toast doesn’t sound as impressive, does it? My BGs have been going down to a range where I feel confident that they won’t go too high if I try a few new things. I’ve been missing bread quite a bit lately. I had cut out all bread, tortillas & even crackers- having only an occasional breaded large chicken tender, my South Beach cereal bars, & popcorn as the source of all my grains. I missed bread, but it was spiking me like a crazy woman & the tortillas seemed even worse! I found a new bread that I wanted to try Sara Lee 45 calorie Delightful 100% Whole Wheat bread has 18g carbs & 5g fiber per TWO slices! Woot! So I have reintroduced bread to my diet & my numbers don’t seem to be skyrocketing like they did before.

I have rediscovered toast. There is something about sandwiches on toast that is just plain awesome. I don’t know why, maybe it’s cooler weather, but I prefer all my sandwiches toasted now. Bacon has been rediscovered as well. It’s a regular on my grocery list. Bacon on toast with mayo, or cream cheese with chives & onions, or with peanut butter (I think someone on the forums had mentioned it before & it really is good). Then there’s ham with cream cheese with onion & chives on toast- my mom used to make this pinwheel appetizer back in the 70′s – ham spread with cream cheese & a green onion laid across it, rolled up & sliced- this tastes even better than those pinwheels! Turkey with swiss & chipitole ranch on toast-yum! I’m even having a single slice of toast with any of the variations listed for breakfast. I think the trick, for me, is not to have more than 3 slices a day & not to have it every day.

I continue to have my South Beach cereal bars for breakfast alot of days, but as they seem to be another of the highest carb thing I eat almost daily, I’m trying to break that habit. I still have my popcorn habit, but my sister got my a hot air popcorn popper that I am going to start experimenting with. Microwave popcorn snack bags always seemed too small & the regular bags seemed to have too much, yet I seemed compelled to finish it all & no I’m not a ‘clean plater’ type- just weird about popcorn, apparently.

I wish I had the fortitude to quit all grains, but it just seems too restrictive to me. Maybe in another year I’ll be there with my discipline, or maybe I can manage it by managing portions, in any case for now I’m loving my toast.
